St. Patrick’s Day Shamrock Shaped Cookies

ST. PATRICK’S DAY SHAMROCK SHAPED COOKIES

The sweetest way to celebrate St. Patrick’s Day is with shamrock shaped cookies? These lovely cookies will always keep it shape while baking, with our simple recipe.  If baking is not your thing, please feel free to use a ready made product like Pillsbury Ready To Bake Refrigerated Sugar Cookie Dough.  I love decorating with Royal Icing, but you could use our simple buttercream frosting to frost the cookies too! 

INGREDIENTS

  • 1 cup butter,  (softened)
  • 1 cup sugar
  • 1 tsp vanilla extract
  • ½ tsp almond extract
  • 1 egg
  • 1 baking powder
  • 2 cups all-purpose flour
  • 3 Extra sugar or powdered sugar for rolling  ((if desired))

THE  ICING

  • Royal Icing
  • Gel Food Coloring (Green)

DIRECTIONS

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the butter vanilla emulsion, almond emulsion, and egg to the butter-sugar mixture. Mix until well combined.
  4. In a separate bowl, whisk together the all-purpose flour and baking powder.
  5. Slowly add the flour mixture to the wet ingredients, mixing until a dough forms.
  6. Place the dough on a lightly floured surface and knead it gently. Roll out the dough to a thickness of about 1/4 inch.
  7. Use your favorite cookie cutters to cut out shapes from the dough.
  8. Place the cut-out cookies onto a baking sheet lined with parchment paper.
  9. If desired, lightly sprinkle the cookies with extra sugar or powdered sugar for added sweetness and decoration.
  10. Bake the cookies in the preheated oven for 6 to 8 minutes, or until the edges are lightly golden.
  11. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

How to Decorate Shamrock-Shaped Sugar Cookies for St. Patrick’s Day

  1. Prepare Your Cookies: Ensure you have 24 Shamrock-Shaped cookies ready. If making your own, ensure they are fully cooled before decorating. (See My Easy Sugar Cookie Recipe for Fun Shapes).
  2. Prepare Your Icing: Divide the white royal icing into 2 separate small bowls. Add 2 drops of green food coloring to one bowl of royal icing and stir to combine for the green icing. Leave the second bowl white. Optionally, for a third color, a lighter green, add a drop of green food coloring to another bowl of royal icing and stir to combine for the light green icing.
  3. Fill Piping Bags: Fill the piping bags with the colored royal icing, creating one green, one white, and optionally one light green piping bag.
  4. Decorate Your Cookies: Begin decorating cookies by outlining the shamrock first, then filling the centers and decorating with the desired design using the piping bags.
  5. Allow to Dry: Allow the cookies to “dry” by ensuring they’re placed in a single layer before storing.

With just a bit of creativity and some colorful icing, you can transform simple sugar cookies into festive treats that are perfect for celebrating St. Patrick’s Day.
