When I was a young girl, Thanksgiving for me was like Sunday Dinner Supersized! I recall playing dolls with my sister Tonja while the house filled with such pleasant moments, starting the night before. My lovely mother baked 8 sweet potato pies and three different cakes. You would certainly find my pinkie-finger print along the bottom of the coconut cake and eventually was revealed at Thanksgiving dinner.
As I became older, I was allowed to peel the corn, then eventually allowed to help dice up the trinity. The trinity is a combination of white onions, celery, and green peppers. This was certainly my favorite because my mom would add them to my favorite dish, stuffing or dressing, the name really depended on who was coming to dinner.
While in college, I spent Thanksgiving with my sister Debora and her new son, Sean. I remember talking on the phone with my mom the entire time while I tried to recreate her stuffing. Thanksgiving just wouldn’t be Thanksgiving without it. I was crushed when I realized I didn’t have Sage and there was no store open.
My mom ensured me it would be perfect without it. I recall constantly checking the oven while my canned, jellied cranberry sauce chilled in the fridge. I told my sister I was sorry it wouldn’t taste like mom’s as we sat the dinner table. Although it didn’t taste like mom’s, it was delicious. It was MY stuffing.
For the last couple of years, we spent Thanksgiving at my sister Martha’s. I have made a vegan stuffing and also a meat lovers stuffing recipe and they both have been a hit. Last year I made a cake, cupcakes, and appetizers. Although my mom lives a world away in Illinois, it feels like she is with us in North Carolina because she shared all her recipes with us,
It has been nearly 20 years since I forgot the sage. However, MY stuffing is a crowd pleaser at every Thanksgiving and Christmas celebration. My husband will bake a turkey every day if it means, I’ll make the stuffing. I never thought I’d be so happy to please my family with one of my favorite dishes. Any thoughts? Happy Thanksgiving to all of America! Stuffing is always super delicious and is almost mandatory at my table during the holiday. Next year I will have my first vegan thanksgiving and that will be a little shock to my taste buds as everything will be different.

Isn’t it interesting how leaving out one ingredient made your stuffing a HIT?! I love it when serendipitous stuff like that happens. The meat lovers stuffing sounds divine!
